Each pan and the lid of each contain stainless steel induction plates that enable them to cook nearly any type of food quickly and evenly, without leaving any spots extremely hot or cold. When it's not being used as a lid, each pan's lid will actually make a great shallow cooker or grilling pan that you can use for side dishes.
