The main benefit to the contact grill like this is that they cook on both sides at the same time and they take less attention from you, as the person preparing the food.
It is circular, so you can only cook what will fit within the circular shape. This makes it lightweight and easier to use, then store.
No matter what you use, the flavor is not going to be the same for almost any food including vegetables and meat.
This unit does not have the same grill lines on it that other indoor grills have.
The indoor cookware is not going to make your food safer or healthier. Sure, outdoor grills can produce cancer causing substances if you do not cook carefully, but the same can be said of the Red Copper Express. Any burning of fat is what causes these cancer causing substances to form, so no matter how you are preparing your food, if you are burning fat you are making them.
Indoor cookware like this, as an alternative to outdoor grilling, does not reduce the amount of fat in your food significantly. For example, if you are preparing a hamburger patty that is 20% fat, pan frying it on this indoor grill will reduce the fat by 52% whereas outdoor grilling will reduce it by 50%. Not really full copper. Remember that the name of this item, alongside many of the other brand named items under this line of cookware, is not really 100% copper. They claim to be 100% copper and the color leads people to believe that this means the entire unit is copper. It is not.

To reduce fat from your food and reduce smoke, trim any excess fats from meats. The less fat on your meats, the less burning, smoking, and fat. Even if grills have heating elements that collect the fat droppings it can increase the risk for indoor fires.
With indoor units like this, there is not the same ability to drain liquids too. If you do not want your marinades to drip onto the counter top you need to let your grilling meats drain on a cooking rack before you prepare them. Baste sparingly and lightly brush any basting solutions on your foods instead.
When you are using this indoor unit you can make so many things. Almost anything you would normally make outdoors can be made on this compact indoor unit. The main advertisement of course is for baked things, for sandwiches and easier foods. Breakfast foods like waffles and pancakes are easily prepared without the mess.
Cuisinart has a larger indoor grill that also closes like Red Copper Express. This is a larger design, much heavier with three small control knobs on the front. You can get grill lines with it because of the deep recesses on the two sides. When closed you get the nice contact grilling experience. It makes paninis, can be a griddle half or full sized, and can be a contact grill. Floating covers adjust to the thickness of your cook. Cooking plates will drain away fat and can be removed or reversed.
This is the other type of indoor grill, the one that does not close and create full contact. It is great for veggies, chicken, fish, steaks, and more. Cool touch handles make it safe to use indoors while the grill surface has variable heat controls to it. Disassemble the unit and throw it in the dishwasher when you are ready to clean it.
