Anyone who is ever used frosting or any type of cake decorating device will understand the tube and plunger design of this unit. In much the same fashion you simply open the tube, Place your ingredients inside, close it, and use the plunger function to push the perfectly round roll out. One of the most challenging aspects of rolling sushi is not so much forming the perfect circle but maintaining it when you were trying to cut the different pieces off of the role. Using this design you no longer have that issue.
Once everything is rolled perfectly it stays that way. No more tricks with wetting the knife, no more problems with all of the sushi contents squirting out either and when you go to cut it. Instead you can use the plunger function to press out one or 2 inches at a time, cutting them into perfect, concentric circles, and then plunging it a bit more. Repeating this process as you work all the way down the sushi roll gives you perfect, restaurant style sushi without the mess.
When you go to make sushi with the rolling mats, the bamboo tends to create holes through which the contents can squeeze, especially small grains of rice. Add to this the issue of trying to tighten the sushi rolls down well enough to compact and it is no wonder that making sushi at home is generally a very messy affair.
Even though some of the mess is alleviated you still have to deal with the sushi rice which, when you add the rice vinegar to it does end up in a very sticky affair. The way it is presented on the website, you have to roll the sushi without the seaweeds through this tube. As such, this means that if you want the seaweed to be the outside of your role you have to push the rice and the filing through the tube onto the seaweed wrap. You have to do this after what you have to try holding place to cut it which presents the same mess and issues as if you were even using the sushi maker.
