This unit is a cookie sheet which means it does not necessarily work to cook all foods. It works better on things like fries or bacon, as demonstrated on the advertisement, but might not give the right space or air flow for other dishes.
The raised dual air design is what the company relies upon for its functionality. Behind this technology is a simple cooking concept. When you cook something in the oven, specific foods need the air circulation produced by the ovens to reach each part of the food. However, when this does not happen, the top and / or sides get more heated air than the bottom. For this reason you might try to cook French fries on a cookie sheet to find that the bottoms have stuck to the pan and did not get proper air circulation. With the dual air design the food you are preparing can rest in an elevated fashion, with space below for the oils or grease to fall.
In general, ovens already have this type of design in them, with the metal sheet that has bars and the bottom sheet that collects grease.
